🕒 Total time: 10mins + 30mins soak time
Makes approx. 10-12 balls
1 cup ground almonds
1/2 cup desiccated coconut, plus extra for rolling
1 Tbsp cocoa powder
1 Tbsp orange rind
1 Tbsp orange juice
Place dates in a bowl and cover with boiling water. Leave to soak for 30 minutes until soften. Once softened, drain and remove pips if you have any.
Put the coconut, ground almond, orange rind and juice, cocoa powder and dates in a food processor and blend. Scrape down the sides and blend again to make sure the mixture is well combined.
Using wet hands, roll a small amount of the mixture into bite-sized balls, and place on a plate to the side. Once you have finished, roll in leftover coconut or ground almonds.
Refrigerate for up to a week. Eat and enjoy 💛
